I've seen deep structures that run fast (Lucky Chances, SF, CA) and other which are wonderful (Venetian, Las Vegas).
Directors can abuse the structure but players expect more play when they hear deep stack.
Again, my experience is that the Venetian (both the DSE series, and regular tournaments) have the most play.

BTW: What do you mean by "we do not allow chops midway through a hand".
Collusion is collusion. If that's what they are doing, it doesn't matter if they agreed on it during the hand or last year.

Greg, aren't you expecting better than 10% "in the money"?
If 10% are paid, than expecting 10% ITM means you see yourself as no better than the rest of the field.
